Indian-Inspired Lentil Soup

My taste buds went to India and back yesterday!
Little morsels of optimal health.
This lentil soup is probably the healthiest lunch I have ever eaten as of late, and for many reasons:
  • low in calories per serving
  • very low in fat
  • an excellent source of fiber
  • high in protein
  • contains garlic, which is known to cure colds
  • the spiciness of the garam masala can reduce nasal congestion
  • for a soup, it's low in sodium (about 50mg per serving)
And on top of all this, it's delicious and simple to prepare.
I got the recipe from VegWeb.com. It yields a lot of soup and I personally think a ladle-and-a-half is a decent-sized serving. Click here for the recipe.

By the way, I find that almost every time I cook lentils they lose their shape and turn into a mushy substance. They still turn out yummy but I wonder what I'm doing wrong... overcooking? I'm glad they retained their shape this time. =)

You can sprinkle the top with some dashes of cumin and/or garam masala to give it a bigger spice kick. You may also serve with some brown basmati rice on the side. I couldn't help myself but grab some more after my first serving. You're going to want to do the same; trust me. =)

  1. I think you might be over cooking them a bit. I make lentils often and don't
    seem as mushy as the ones in the picture.

  2. Yeah, the lentils look like purée in the pictures! I'll keep a better eye on them next time. :)
