Why?
May 26 is considered "National Blueberry Cheesecake Day" and, knowing me, I love blueberries!
I don't remember the last time I had traditional, non-vegan cheesecake but I occasionally indulge in delicious vegan cheesecakes from EarthCafe and Sipz.
But instead of going out to eat a non-dairy cheesecake, I decided to search for a recipe and make one myself. I found a beautiful recipe on this blog called The Sunny Raw Kitchen (click here to see the recipe). The results were both gorgeous and delicious!

I have never made a cheesecake before, vegan or otherwise, and I have also never made a raw cheesecake either. Since today was my first time, I gained about 100 experience (pardon me, I just played Diablo 3). The filling was so smooth and creamy that I was cleaning out the insides of my Vitamix with a spatula. Mmm...

I followed the recipe pretty well but I did not use melted cacao butter in the filling. All in all, this is my new favorite rich dessert right now and I will selfishly indulge myself with it when I please. :)In case you didn't already know, many raw food recipes contain high amounts of fat and carbohydrates due to the extensive use of nuts, oils, and fruit (dried or fresh). Don't let this fact deter you away from enjoying raw foods, however, because even though the fat content of this dessert is quite scary (see below!) it is undoubtedly healthier than traditional, non-vegan cheesecake. I would choose nuts and fruit over dairy products any day.

I personally don't think this is anywhere near as bad as the cheesecakes served at, say, The Cheesecake Factory, where single slices generally range from 400 to 1,150 calories. No joke. CalorieKing's nutrition software if quite handy, I tell you.
