I got this recipe online while searching for a way to use some of the discontinued blue cornmeal that I bought for the sake of a good deal. The site I got this recipe from is a cute blog called The Happy Go Lucky Vegan. The picture of the pancakes on the blog looked so great I had to make them myself!
I altered the recipe just a tad bit. Here's how I did it:
Blue Corn Banana Pancakes with Lemon Zest
makes about six pancakes
1 1/2 cups whole wheat pastry flour
1/2 cup blue cornmeal
1/2 teaspoon sea salt
1 teaspoon baking powder
dash of cinnamon
1 lemon, zest grated
1 teaspoon vinegar
2 tablespoons olive oil
1 1/2 cups unsweetened almond milk
1 medium banana, peeled and thinly sliced into rounds
oil spray
1. In a large bowl, mix together all dry ingredients with a whisk until evenly combined.
2. Add in the wet ingredients (except for the banana) and stir well. Use a little more almond milk if needed.
3. Spray a large skillet with oil and warm over medium-high heat. Add the pancake batter on the skillet. Carefully place banana rounds atop the pancake batter and cook until the sides of the pancake firm up. Flip over with a spatula and cook until golden. Continue with the rest of the batter.
4. Serve with Earth Balance butter, maple/agave syrup, and any other toppings of your choice.

So what's my deal with all this pancake talk? Apparently, tomorrow (Sept. 26th) is National Pancake Day! I just wanted to partake today because I literally have class all day tomorrow. Celebrate by whipping up today's pancakes or choose a recipe to your liking below.
The name says it all. You'll swear you're eating an apple pie for breakfast!
